Supercharged Pistachio Chocolate Cookies

1.5 cup Pistachio nuts
1 tbsp bee pollen
1 tbsp Lucuma powder
1 tbsp Ashwagandha powder
1 tsp Vanilla extract
1 tbsp Coconut oil
1 egg
40-50g 90% Dark chocolate

Makes about 12 cookies.
Put the oven on to 175 degrees Celsius
Mix the pistachio nuts in a food processor until it’s flour like. Add the dry ingredients. Mix. Add the vanilla extract. Mix. Add the coconut oil. Mix. Add the egg and mix one last time until it is a firm dough that you can make balls out of. Roll small bites of the dough into balls and add them to an oven plate covered with parchment paper. Take a fork to press them into cookies. Put them in the oven for about 10-12 minutes. Let cool a bit before putting them in the freezer while you melt the chocolate. Take them out and dip them into the chocolate. Sprinkle some bee pollen over the chocolate. Let the chocolate harden before enjoying them.
