Sweet potato
4 tomatoes
1 pot Basil
1-2 garlic
1 pinch Salt
1 pinch Black pepper
1-2 tbsp Olive oil
1 tsp White wine vinegar
Cut the tomatoes into 1 cm cubes. Chop the basil and grate the garlic. Mix the tomatoes, basil, garlic, salt, pepper, olive oil and vinegar.
Slice the sweet potato in 1cm thick slices. Roast in the toaster at medium heat 4 times
Add the tomato mix at the top of the slices and roasted sweet potato. Enjoy!
